1 cup white flour
one/four cup flaxseeed
1/four cup brewers yeast (not dietary yeast)
one-two ripe bananas, mashed
one/four cup blueberries, or cherries (pitted), or cranberies (add far more sugar to counter sourness!)
2 tbsp turbinado sugar
three tbsp baking powder
one tsp salt
1 cup soy milk (more if batter as well thick)
two tbsp vegetable oil

Mash banana with potato masher until un-lumpy.

Mix the flour, sugar, baking powder, and salt, with banana in a massive bowl until nicely mixed.
Combine in soy milk and oil and beat together until batter is smooth. Toss in berries. Mix.

Drop one/four cup of batter at a time onto nicely greased frying pan above medium heat. When bubbles appear on the surface of the pancake –about two minutes– flip, and cook the other side for one more 1-two minutes.

For topping the kugel: non-dairy ‘sour’ cream, blended from silken tofu, 3TBSP Safflower oil, 2 TBSP fresh-squeezed lemon juice, one TBSP vinegar.

‘Popcorn’ cauliflower.

Ingredients

1 head cauliflower
two to three tablespoons olive oil
1 teaspoon Kosher salt
coarsely-ground black pepper, to taste

Sesame seed oil is tasty substitution for olive oil (tossed with sesame seeds).

PRPARATION

one. Preheat oven to 400°F.

two. Rinse cauliflower lower into quarters. Cut off and discard leaves and cores. Chop into popcorn-size pieces.

3. Toss cauliflower with olive oil, salt, and pepper.

4. Spread in a single layer on baking dish (lined with aluminum foil or parchment paper.)

5. Roast 30-forty minutes, turning each ten minutes. Carried out when caramelized on edges but still tender.Roast for longer if greater pieces or needed, but check out frequently. Do not burn up!

six. Serve immediately.

Experiment with spices: I like Mrs. Dash and Spike, the two salt-totally free.
